thought for tuesday

i have none. here is something to do with your leftover mashed potatoes. my husband commissioned me to make a potato pie. he had heard of sweet potato pie and he is a bit of a nut- so he wanted a regular potato pie. most of the time what comes to mind is a savory pie- but- i found a delicious sweet pie- and i can vouch because i made one and we ate it. so enjoy all of the leftovers and continue feasting until the new year! here it is- potato pie:

2 eggs
2 cups mashed potatoes
1/2 cup butter, softened
3/4 cup sugar
1/2 cup brown sugar
1/4 cup evaporated milk
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 teaspoon vanilla extract
pastry for pie crust

prepare 9 inch pastry. heat oven to 425 degrees. beat eggs; beat in remaining ingredients. pour into crust and bake 15 minutes. reduce temperature to 350 degrees. bake until done in center and crust is browned, about 45 minutes.

I tell you, cinnamon and sugar will just about fix anything. We don't have one tsp of potatoes leftover. Darn.

In Talkeetna, Alaska, there is a place called the Talkeetna Roadhouse. There, they make a chocolate potato cake that is the densest, richest, most amazing chocolate cake I have ever tasted. And they will NOT part with the recipe. They are not friendly, until you eat the cake.

The pie sounds good too!

Sounds good, but I have no intention on baking squat!!!! That would cut into the little time I have for blogging after I get off work in the morn. That AINT GONNA HAPPEN!!!! I will have to take your word on it. ;)

Actually, it does sound kinda good. I am a terrible cook. One time, I found a recipe for mayo biscuits, and decided to try it. OMFG!!! Even the DOGS wouldn't eat 'em.
